Happy Father’s Day!
I’ve made my dad his traditional coconut cream pie. This year, I did a slightly different meal than usual. Barbecued thick-cut pork chops, sauteed apples, corn on the cob, and rolls. Dad’s got a sweet tooth, like me, so I went for sweet but substantial. Again, like me. Ahem.
If you are able to tell your father you love him and you haven’t already, you should go do it right now.

I’m not THAT good. He’s mildly diabetic, so really, I shouldn’t be making him a pie, but I figure once a year (okay, twice, for his birthday too) isn’t so bad. Fortunately, his roommate will keep him in line, and his natural generous nature will cause him to give away 3/4 of the pie to the people in his condo village. He’s always been someone who likes to do nice things for others.
